Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Mix crust
Preheat the oven to 220°C/200°C fan. Crack the eggs into a bowl and add the grated mozzarellacheese. Whisk until combined.
2 Bake crust
Use a spatula to spread the cheese and egg batter over a lined baking tray (make two round circles or make one large pizza). Bake in the oven for 15 min or until the pizza crust turns golden. Remove from the oven and let cool for 2-3 min.
3 Cut and fry veggies
Meanwhile, thinly slice the zucchini. Peel and thinly slice the onion. Heat a drizzle of oil in a pan over a medium heat. Fry the vegetables for 5-6 min until softened.
4 Top crust
Spread the tomato paste over the crust and sprinkle with oregano. Top with the zucchini and onion mix, feta cheese, chilli flakes and olives. Bake the pizza for 5-10 minutes until nicely browned.
5 Prep toppings
Meanwhile, slice the cherry tomatoes. Was and dry the rocket leaves.
6 Serve
Top the hot pizza with the cherry tomatoes and the rocket leaves.
