Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep veg
Peel and finely slice the redonion. Trim and finely slice the springonion. Peel and grate the carrot. Trim and roughly chop the pakchoi. Deseed and finely slice the redpepper.
2 Fry enoki
Trim and discard the base of the enokimushrooms. Gently break the bunch apart. Heat a large pan over a medium-high heat with a drizzle of oil. Once hot, fry the enoki for 2-3 min and transfer onto a plate. Set aside and return the pan to a medium-high heat.
3 Stir-fry
Add another drizzle of oil to the pan, once hot, add the onions with a pinch of salt and fry for 5 min until softened. Move the onions to the side of the pan and add the eggs. Fry for 1-2 min, scrambling with a spatula as you go. Add the springonion (reserve some for garnish), carrot, pakchoi and redpepper. Fry for 3 min further.
4 Make sauce
Meanwhile, in a small bowl, add the oystersauce, brownsugar, chilliflakes(spicy!), gingergarlicpaste, ricevinegar and sweetsoysauce. Mix well and set aside.
Tip!Sensitive to spice? Go easy on the chilli flakes.
5 Boil noodles
Meanwhile, bring a large pot of salted water to a boil. Add the wheat noodles and cook for 3-4 min. Drain well.
6 Serve
Add the sauce, wheatnoodles and sesameseeds (reserve some for garnish) to the stir-fry. Toss well and fry for 2 min further. Remove from the heat and add the beansprouts, sesameoil and give it a final toss. Divide chow mein among bowls, top with the whiteenoki. Garnish with the remaining springonion and sesameseeds and serve.
