Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry mince
Heat a non-stick pan over medium heat with a drizzle of oil.
Fry the onion and mince 5-7 min or until browned.
2 Add veg
Deseed and chop the pepper into bite-sized pieces.
Add the dicedpepper and fry for 2-3 min.
Add the fajitaseasoning and chipotleadobo(spicy!).
Fry for 1 min.
3 Add rice
Using your hands, squeeze the rice in the packet to separate the grains.
Add the rice and 2 Tbsp water to the pan.
Mix well to flavour and heat the rice.
Add the gratedcheddar and mix through.
4 Make crema
Pick and finely chop the coriander.
In a bowl, add the choppedcoriander, sour cream and squeeze of lime juice.
Tip!The crema can be included into the burrito or served as a dip alongside.
5 Assemble
Lay the tortilla flat and spoon some crema as a base in the centre of the tortilla.
Add a spoonful of the beef and rice mixture.
Roll the burrito by folding in the sides first, then roll tightly from the bottom up, ending with the seam side down.
Heat a large pan over a medium heat with a drizzle of oil.
Carefully toast the burrito, seam side down first, until golden brown and crisp to your liking.
Tip!Altervatively, toast the rolled burritos in a preheated air fryer at 180°C for 3-4 min.
6 Serve
Serve the Express Beef Burrito with the mildtomatosalsa alongside.
