Instructions
1 Fry
Heat a non-stick pan over medium heat with a drizzle of olive oil.
Fry the beefmince for 3-4 min or until browned.
Add the choppedonion, 0.5 stockcube, a pinch of dried thyme (to taste), and fry for 2-3 min until softened.
Add the tomato paste, a pinch of sugar, the measured water, and a small splash of whipping cream (reserving the rest for the pasta)
Cover and cook on low until ready to serve.
2 Cook broccoli
Meanwhile, bring a large pot of salted water to a boil.
Add the broccoli and cook for 4 min until tender.
Use a slotted spoon to remove the broccoli, and set aside.
Reserve the pot of water to cook the pasta in.
3 Boil pasta
Return the pot of water to a boil, and add the pasta.
Cook for 8-10 min until the pasta is 'al dente' or cooked to your liking.
Reserve 1 cup of pastawater.
Drain, and reserve the pot.
4 Add cream
Pick and roughly chop the basil.
Return the pot to a medium high heat.
Melt the garlicbutter, and add the cooked and drained pasta, whipping cream, parmesan, and basil.
Add some of the reserved pastawater to create a creamysauce until it reaches your desired consistency.
Tip!You can add the beef mince to the pasta at this stage, or serve it separately on top of the pasta.
5 Serve
Serve the BeefMince Ragu with the ParmesanMafaldePasta, and broccoli on the side.
