Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry

1 Fry

  • Heat a non-stick pan over medium heat with a drizzle of olive oil.
  • Fry the beef mince for 3-4 min or until browned.
  • Add the chopped onion, 0.5 stock cube, a pinch of dried thyme (to taste), and fry for 2-3 min until softened.
  • Add the tomato paste, a pinch of sugar, the measured water, and a small splash of whipping cream (reserving the rest for the pasta)
  • Cover and cook on low until ready to serve.
Cook broccoli

2 Cook broccoli

  • Meanwhile, bring a large pot of salted water to a boil.
  • Add the broccoli and cook for 4 min until tender.
  • Use a slotted spoon to remove the broccoli, and set aside.
  • Reserve the pot of water to cook the pasta in.
Boil pasta

3 Boil pasta

  • Return the pot of water to a boil, and add the pasta.
  • Cook for 8-10 min until the pasta is 'al dente' or cooked to your liking.
  • Reserve 1 cup of pasta water.
  • Drain, and reserve the pot.
Add cream

4 Add cream

  • Pick and roughly chop the basil.
  • Return the pot to a medium high heat.
  • Melt the garlic butter, and add the cooked and drained pasta, whipping cream, parmesan, and basil.
  • Add some of the reserved pasta water to create a creamy sauce until it reaches your desired consistency.
Tip! You can add the beef mince to the pasta at this stage, or serve it separately on top of the pasta.
Serve

5 Serve

  • Serve the Beef Mince Ragu with the Parmesan Mafalde Pasta, and broccoli on the side.
