Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make sauce
In a small bowl, combine the garlic paste, corn starch, soy sauce, oyster sauce, teriyaki sauce, brown sugar, sesame oil, and measured water.
2 Stir-fry
Heat a large non-stick pan over medium heat with a drizzle of oil.
Fry the onion for 1-2 min until softened.
Add the chicken cubes with a pinch of salt, and fry for 3-4 min until golden.
Tip!Stir-fry often to prevent the onion from burning.
3 Add vegetables
Add the diced peppers and cashew nuts and fry for 2-3 min further until lightly charred.
4 Combine
Lower the heat and pour the sauce over.
Mix, cover and simmer for 3-5 min until the chicken is cooked through, and the sauce has thickened.
Tip!Add an extra splash of water if you like it saucier.
5 Fry rice
Meanwhile, heat another pan or pot over a medium heat with a drizzle of oil.
Fry the springonions, rice, and a pinch of salt and pepper.
Stir-fry for 2-3 min until warmed through.
6 Serve
Serve the CashewChicken Stir-Fry over the Rice.
