Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make sauce

  • In a small bowl, combine the garlic paste, corn starch, soy sauce, oyster sauce, teriyaki sauce, brown sugar, sesame oil, and measured water.
Stir-fry

2 Stir-fry

  • Heat a large non-stick pan over medium heat with a drizzle of oil.
  • Fry the onion for 1-2 min until softened.
  • Add the chicken cubes with a pinch of salt, and fry for 3-4 min until golden.
Tip! Stir-fry often to prevent the onion from burning.
Add vegetables

3 Add vegetables

  • Add the diced peppers and cashew nuts and fry for 2-3 min further until lightly charred.
Combine

  • Lower the heat and pour the sauce over.
  • Mix, cover and simmer for 3-5 min until the chicken is cooked through, and the sauce has thickened.
Tip! Add an extra splash of water if you like it saucier.
Fry rice

5 Fry rice

  • Meanwhile, heat another pan or pot over a medium heat with a drizzle of oil.
  • Fry the spring onions, rice, and a pinch of salt and pepper.
  • Stir-fry for 2-3 min until warmed through.
Serve

  • Serve the Cashew Chicken Stir-Fry over the Rice.
