Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry
Bring a large pot of salted water to the boil.
Heat a large frying pan over a medium-high heat with a drizzle of olive oil.
Fry the choppedonion for 3 min.
Add the zucchini to the onions and fry together for 2 min further with a pinch of salt.
Tip!Prefer the zucchini softer? Fry for an additional 1-2 mins.
2 Prep
Zest the lemon and cut it into wedges.
3 Boil pasta
Boil the pappardelle for 2 mins.
Reserve a cup of pasta water.
4 Make sauce
Add creamcheese, mustard, garlicpowder, lemon zest and lemonpepperseasoning.
Add to the pan, creamcheese, mustard, garlicpowder, lemonzest and lemonpepperseasoning.
Add a generous splash of pasta water and mix well.
5 Add pasta
Add the parmesan, peas and cooked pasta to the sauce.
Toss well to mix.
Squeeze in the lemonjuice to taste.
Tip!Add a little more of the pasta water to loosen the sauce if required.
6 Serve
Serve the Creamy Goat'sCheese and ZucchiniFreshPappardelle.
Crumble over the goat'scheese and pick over the basilleaves.
