Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry

  • Bring a large pot of salted water to the boil.
  • Heat a large frying pan over a medium-high heat with a drizzle of olive oil.
  • Fry the chopped onion for 3 min.
  • Add the zucchini to the onions and fry together for 2 min further with a pinch of salt.
Tip! Prefer the zucchini softer? Fry for an additional 1-2 mins.

  • Zest the lemon and cut it into wedges.
Boil pasta

3 Boil pasta

  • Boil the pappardelle for 2 mins.
  • Reserve a cup of pasta water.
Make sauce

4 Make sauce

  • Add cream cheese, mustard, garlic powder, lemon zest and lemon pepper seasoning.
  • Add to the pan, cream cheese, mustard, garlic powder, lemon zest and lemon pepper seasoning.
  • Add a generous splash of pasta water and mix well.
Add pasta

5 Add pasta

  • Add the parmesan, peas and cooked pasta to the sauce.
  • Toss well to mix.
  • Squeeze in the lemon juice to taste.
Tip! Add a little more of the pasta water to loosen the sauce if required.
Serve

6 Serve

  • Serve the Creamy Goat's Cheese and Zucchini Fresh Pappardelle.
  • Crumble over the goat's cheese and pick over the basil leaves.
