Instructions

Pickle veg

1 Pickle veg

  • In a small bowl, combine the sliced red onion, shredded red cabbage, red vinegar, sugar, a small drizzle of olive oil, and a pinch of salt.
  • Mix really well and set aside to marinate.
Make tzatziki

2 Make tzatziki

  • Meanwhile, peel and finely mash the garlic.
  • Slice the lemon in half.
  • Pick and finely chop the mint, leaving some leaves whole for serving.
  • Grate the cucumber, then carefully squeeze out any excess water.
  • In a small bowl, combine the yogurt, garlic, mint, grated cucumber, and a squeeze of lemon juice.
  • Season with a pinch of salt and pepper to taste.
  • Mix well, and set tzatziki aside.
Tip! Go easy on the raw garlic if you find the taste too punchy.
Fry lamb

3 Fry lamb

  • Heat a large pan over a medium-high heat with a drizzle of oil.
  • Fry the lamb mince for 4-5 min until browned.
  • Mix in the vegetable seasoning, garlic onion powder, cumin powder, and oregano.
  • Cook for 1 min further.
  • Finish with a small splash of water and a squeeze of lemon juice (to taste) to make it a bit saucy.
  • Cover to keep warm until ready to serve.
Prep gyros

4 Prep gyros

  • Meanwhile, slice the cherry tomatoes in half.
  • Crumble the feta.
  • Microwave the Pitta for 30 sec until hot.
Serve

5 Serve

  • Slice the pitta in half to make pockets.
  • Spread in some tzatziki, and add the lamb, pickled veg, cherry tomatoes, and feta.
  • Serve the Greek Lamb Gyros Sandwich with Feta, Tzatziki and Cherry Tomatoes.
  • Garnish with the reserved mint leaves.
