Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Pickle veg
In a small bowl, combine the slicedredonion, shredded red cabbage, redvinegar, sugar, a small drizzle of olive oil, and a pinch of salt.
Mix really well and set aside to marinate.
2 Make tzatziki
Meanwhile, peel and finely mash the garlic.
Slice the lemon in half.
Pick and finely chop the mint, leaving some leaves whole for serving.
Grate the cucumber, then carefully squeeze out any excess water.
In a small bowl, combine the yogurt, garlic, mint, grated cucumber, and a squeeze of lemonjuice.
Season with a pinch of salt and pepper to taste.
Mix well, and set tzatziki aside.
Tip!Go easy on the raw garlic if you find the taste too punchy.
3 Fry lamb
Heat a large pan over a medium-high heat with a drizzle of oil.
Fry the lambmince for 4-5 min until browned.
Mix in the vegetableseasoning, garliconionpowder, cuminpowder, and oregano.
Cook for 1 min further.
Finish with a small splash of water and a squeeze of lemonjuice (to taste) to make it a bit saucy.
Cover to keep warm until ready to serve.
4 Prep gyros
Meanwhile, slice the cherry tomatoes in half.
Crumble the feta.
Microwave the Pitta for 30 sec until hot.
5 Serve
Slice the pitta in half to make pockets.
Spread in some tzatziki, and add the lamb, pickled veg, cherry tomatoes, and feta.
Serve the GreekLamb Gyros Sandwich with Feta, Tzatziki and Cherry Tomatoes.
Garnish with the reserved mint leaves.
