Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make sauce

1 Make sauce

  • Cut the lemon into wedges.
  • In a small bowl or measuring jug, combine the honey, wholegrain and dijon mustard, 1Tbsp lemon juice, 1 Tbsp olive oil, whipping cream and garlic powder.
  • Stir to mix well.
  • Set aside until step 4.
Make rice

2 Make rice

  • Heat a large pan over medium heat with a drizzle of oil.
  • Fry the spring onion for 2-3 min until softened.
  • Using your hands, squeeze the rice in the packet to separate the grains.
  • Add the rice, classic vegetable mix and vegetable seasoning to the onion. Mix through.
  • Add a splash of water, cover and allow to steam for 2-3 min.
Fry chicken

3 Fry chicken

  • Meanwhile, heat a separate pan over medium-heat with a drizzle of oil.
  • Fry the chicken with a pinch of salt and pepper for 5-7 min, turning often.
Add sauce

4 Add sauce

  • Add the sauce.
  • Turn the chicken in the sauce to fully coat.
  • Simmer for 2-3 min until slightly thickened and the chicken is cooked.
Serve

5 Serve

  • Serve Honey Mustard Chicken over Vegetable Rice, with any extra sauce drizzled over the top.
