Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Roughly chop the green peppercorns.
Cook veg

2 Cook veg

  • Heat a large pan over medium-high heat with a drizzle of oil.
  • Stir-fry the carrots and green veg medley for 2-3 min.
  • Add half the garlic butter and cook for 1 min until tender and vibrant.
  • Season with salt and pepper.
  • Remove from the pan and keep warm.
  • Wipe and reserve the pan.
Fry steak

3 Fry steak

  • Return the pan to high heat with a drizzle of oil.
  • Pat the steaks dry with kitchen paper.
  • Season the steaks with salt.
  • Once very hot, fry the steaks for 10-20 sec on each side until cooked as preferred.
  • Transfer the steaks to a plate and leave to rest.
  • Reserve the pan.
Make sauce

4 Make sauce

  • Return the pan to medium heat.
  • Add the remaining garlic butter and melt.
  • Crack in some black pepper and add the green peppercorns.
  • Cook for 30 sec.
  • Pour in the beef stock and simmer for 1 min until slightly reduced.
  • Add the cream and simmer for 2 min until thickened.
  • Turn off the heat.
Reheat steak

5 Reheat steak

  • Return the steaks and any juices to the sauce.
  • Spoon over the sauce to warm through.
Serve

6 Serve

  • Plate up the Minute Steak with Creamy Peppercorn Sauce and Vegetable Medley!
