Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Roughly chop the greenpeppercorns.
2 Cook veg
Heat a large pan over medium-high heat with a drizzle of oil.
Stir-fry the carrots and greenvegmedley for 2-3 min.
Add half the garlic butter and cook for 1 min until tender and vibrant.
Season with salt and pepper.
Remove from the pan and keep warm.
Wipe and reserve the pan.
3 Fry steak
Return the pan to high heat with a drizzle of oil.
Pat the steaks dry with kitchen paper.
Season the steaks with salt.
Once very hot, fry the steaks for 10-20 sec on each side until cooked as preferred.
Transfer the steaks to a plate and leave to rest.
Reserve the pan.
4 Make sauce
Return the pan to medium heat.
Add the remaining garlicbutter and melt.
Crack in some blackpepper and add the greenpeppercorns.
Cook for 30 sec.
Pour in the beefstock and simmer for 1 min until slightly reduced.
Add the cream and simmer for 2 min until thickened.
Turn off the heat.
5 Reheat steak
Return the steaks and any juices to the sauce.
Spoon over the sauce to warm through.
6 Serve
