Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry veg
Heat a large frying pan over a medium-high heat with a drizzle of oil.
Fry the slicedmushrooms, broccoli and carrot for 5-7 min.
2 Heat rice
Meanwhile, using your hands squeeze the rice in the packet to separate the grains.
Heat another frying pan over a medium-high heat with a small drizzle of oil.
Add the edamame beans and cook for 1 min.
Add the rice and stir-fry for 2-3 min until warmed through.
Season with salt and pepper to taste.
3 Add sauce
Meanwhile, in a small bowl, combine the miso, rice vinegar, soy sauce, sesame oil and brown sugar.
Add the sauce to the veggies.
Mix well and cook for 2-3 min until the sauce has thickened slightly.
4 Serve
Cut the lime into wedges.
Serve the MisoVegetable Stir Fry and EdamameRice topped with the springonions, sesameseeds and a squeeze of limejuice.
