Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry
Bring a large pot of salted water to boil.
Roughly chop half of the pepperoni (saving the rest for topping).
Heat a pan over a medium-high heat with a drizzle of oil.
Fry the onions and choppedpepperoni for 2-3 min until softened and slightly crispy.
2 Make sauce
Add the tomatopaste, passata and measured water to the pan.
Mix well and season with the garlic onion powder, oregano, BBQ spice and pinch of pepper.
Mix again and bring to a simmer.
Reduce the heat to medium and cook for 5-6 min until the sauce has thickened slightly.
3 Boil pasta
Meanwhile, boil the rigatoni for 3-4 min until 'al dente' or cooked to your liking.
Drain.
4 Add pasta
Mix the baby spinach into the sauce.
Add the cooked pasta and toss to coat.
Cook for 1 min, mixing well.
5 Top
Preheat the grill to medium-high.
Top the pasta with the mozzarella and remaining pepperoni.
Grill for 2-3 min until golden and the cheese is melted.
Tip!Don't have a grill, cover the pan with a lid and leave to melt with the heat on low for 2-3 min.
6 Serve
Pick the basilleaves.
