Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry chicken

1 Fry chicken

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the chicken for 5-7 min until golden and cooked through.
Prep

  • Meanwhile, deseed and roughly chop the pepper.
  • Chop the cucumber into small bite-sized pieces.
  • Drain the sweet corn.
Heat rice

3 Heat rice

  • Heat a second pan over a medium-high heat with another drizzle of oil.
  • Fry the pepper for 2 min.
  • Add the butter, cauli rice, cajun spice (spicy!), turmeric and peas.
  • Mix well to coat all of the rice and peas in the spices.
  • Cook for 1-2 min until warmed through.
Add sauce

4 Add sauce

  • Add the Peri-Peri marinade (spicy!) to the chicken.
  • Toss and cook for 1 min further.
  • Remove the chicken and sauce from the pan and set aside.

Mix salad

5 Mix salad

  • Meanwhile, cut the lime into wedges.
  • In a bowl combine the sweet corn and cucumber with the mayonnaise, a squeeze of lime juice and a spoon of the cooked peri-peri marinade (spicy!).
  • Pick in the parsley leaves and adjust the seasoning to taste. Reserve some parsley for Step 6.
  • To the salad mix in a spoon of the cooked peri peri sauce (spicy!).
Serve

6 Serve

  • Finish the spicy rice with a squeeze of lime juice and the remaining parsley.
  • Serve the Peri-peri Chicken with Spicy Cauli Rice and Creamy Sweet Corn Salad
