Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry chicken
Heat a large frying pan over a medium-high heat with a drizzle of oil.
Fry the chicken for 5-7 min until golden and cooked through.
2 Prep
Meanwhile, deseed and roughly chop the pepper.
Chop the cucumber into small bite-sized pieces.
Drain the sweetcorn.
3 Heat rice
Heat a second pan over a medium-high heat with another drizzle of oil.
Fry the pepper for 2 min.
Add the butter, cauli rice, cajunspice(spicy!), turmeric and peas.
Mix well to coat all of the rice and peas in the spices.
Cook for 1-2 min until warmed through.
4 Add sauce
Add the Peri-Perimarinade(spicy!) to the chicken.
Toss and cook for 1 min further.
Remove the chicken and sauce from the pan and set aside.

5 Mix salad
Meanwhile, cut the lime into wedges.
In a bowl combine the sweetcorn and cucumber with the mayonnaise, a squeeze of limejuice and a spoon of the cooked peri-perimarinade(spicy!).
Pick in the parsleyleaves and adjust the seasoning to taste. Reserve some parsley for Step 6.
To the salad mix in a spoon of the cooked peri peri sauce(spicy!).
6 Serve
Finish the spicyrice with a squeeze of limejuice and the remaining parsley.
