Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry chicken

1 Fry chicken

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the chicken for 8-10 min until golden and cooked through.
Prep

2 Prep

  • Meanwhile, deseed and roughly chop the pepper into bite-sized pieces.
  • Chop the cucumber into small bite-sized pieces.
  • Drain the sweet corn.
Make rice

3 Make rice

  • Heat a second pan over a medium-high heat with another drizzle of oil.
  • Fry the pepper for 2 min.
  • Using your hands squeeze the rice in the packet, to separate the rice grains.
  • Add the butter, rice, cajun spice (spicy!), turmeric and peas.
  • Mix well to coat all of the rice and peas in the spices.
  • Cook for 1-2 min until warmed through and adjust seasoning to taste.
Add sauce

4 Add sauce

  • Add the Peri-Peri marinade (spicy!) to the chicken.
  • Toss and cook for 1 min further.
  • Remove the chicken and sauce from the pan and set aside.
Mix salad

5 Mix salad

  • Cut the lime into wedges.
  • In a bowl combine the sweet corn and cucumber with the mayonnaise and a squeeze of lime juice to taste.
  • To the salad mix in a spoon of the cooked peri peri sauce (spicy!).
  • Pick in the parsley leaves and adjust the seasoning to taste. Reserve some parsley for Step 6.
Serve

6 Serve

  • Finish the spicy rice with a squeeze of lime juice and the remaining parsley.
  • Serve the Peri-peri Chicken with Spicy Rice and Creamy Sweet Corn Salad
