Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry prawns
Bring a large pot of salted water to the boil.
Heat a large frying pan over a medium-high heat with a drizzle of oil.
Fry the prawns, with a pinch of salt for 3-4 min until cooked through.
Remove, set aside and reserve the pan.
2 Fry
Return the frying pan to the heat with another drizzle of oil.
Fry the onions for 3-4 min until softened.
3 Make sauce
Add the tomatopassata, vegetable seasoning, tomatopaste, dried oregano, measured water and garliconionpowder.
Mix well and bring to a simmer and reduce the heat to medium.
Simmer, uncovered, for 5-7 min until slightly reduced.
Adjust seasoning to taste.
4 Boil pasta
Meanwhile, boil the pappardelle for 2 min until tender.
Drain and reserve a cup of pastawater.
5 Add pasta
Once the sauce has been reduced, add the cooked pappardelle and babyspinach to the pan.
Toss to coat.
Cook for 1 min, until the spinach has wilted.
Tip!Add a splash of pasta water to loosen if desired.
6 Serve
Serve the Prawn, Tomato and SpinachFresh Pappardelle topped with the gratedParmesan and basilleaves.
