Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry prawns

1 Fry prawns

  • Bring a large pot of salted water to the boil.
  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the prawns, with a pinch of salt for 3-4 min until cooked through.
  • Remove, set aside and reserve the pan.

2 Fry

  • Return the frying pan to the heat with another drizzle of oil.
  • Fry the onions for 3-4 min until softened.
Make sauce

3 Make sauce

  • Add the tomato passata, vegetable seasoning, tomato paste, dried oregano, measured water and garlic onion powder.
  • Mix well and bring to a simmer and reduce the heat to medium.
  • Simmer, uncovered, for 5-7 min until slightly reduced.
  • Adjust seasoning to taste.
Boil pasta

4 Boil pasta

  • Meanwhile, boil the pappardelle for 2 min until tender.
  • Drain and reserve a cup of pasta water.

5 Add pasta

  • Once the sauce has been reduced, add the cooked pappardelle and baby spinach to the pan.
  • Toss to coat.
  • Cook for 1 min, until the spinach has wilted.
Tip! Add a splash of pasta water to loosen if desired.
Serve

6 Serve

  • Serve the Prawn, Tomato and Spinach Fresh Pappardelle topped with the grated Parmesan and basil leaves.
