Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry

1 Fry

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the beef mince for 3-5 min until browned.
Prep

2 Prep

  • Meanwhile, pick and roughly chop the thai basil. Reserve some whole leaves for garnish.
  • Cut the lime into wedges.
Add veg

3 Add veg

  • Add the pepper and beans.
  • Fry for further 2 min.
Season

4 Season

  • Add the tomato paste, red curry paste(spicy!), sambal oelek(spicy!), garlic ginger paste, soy sauce and sugar.
  • Mix well and fry for 1 min until fragrant
Add rice

5 Add rice

  • Add a splash of water to the pan.
  • Using your hands squeeze the rice in the packet to separate the grains.
  • Add the rice, chopped thai basil and some of the spring onions (saving the rest for garnish), stir fry for 2-3 min.
Serve

6 Serve

  • Serve the Spicy and Aromatic Thai Beef Fried Rice topped with the reserved basil leaves.
