Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make salad
Slice the cucumber into thin rounds.
In a small bowl, combine the whitesugar and ricevinegar.
Mix in the cucumbers and top with sesameseeds.
2 Cook beef
Heat a large pan or pot over high heat with the sesameoil.
Fry the beefmince, using a wooden spoon to break up, for 4-5 min until browned nicely.
Tip!If cooking for 4 people use 2 pans or a large pot.
3 Make sauce
Add the gingergarlicpaste, and half the springonion (reserving the rest for garnish).
Stir-fry for 1-2 min.
Add the gochujang(spicy!), soysauce, honey and measured water.
Bring to a boil, then reduce the heat to medium and simmer for 2 min.
4 Finish noodles
Add the edamame and carrots.
Cook for 1 min.
Mix in the udonnoodles.
Cook for 1-2 min until the noodles are coated in the sauce.
5 Serve
Serve the Spicy GochujangBeefUdon Noodles with Pickled Cucumber Salad to the side.
Garnish with the remaining springonion.
