Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make salad

1 Make salad

  • Slice the cucumber into thin rounds.
  • In a small bowl, combine the white sugar and rice vinegar.
  • Mix in the cucumbers and top with sesame seeds.
Cook beef

2 Cook beef

  • Heat a large pan or pot over high heat with the sesame oil.
  • Fry the beef mince, using a wooden spoon to break up, for 4-5 min until browned nicely.
Tip! If cooking for 4 people use 2 pans or a large pot.
Make sauce

3 Make sauce

  • Add the ginger garlic paste, and half the spring onion (reserving the rest for garnish).
  • Stir-fry for 1-2 min.
  • Add the gochujang (spicy!), soy sauce, honey and measured water.
  • Bring to a boil, then reduce the heat to medium and simmer for 2 min.
Finish noodles

4 Finish noodles

  • Add the edamame and carrots.
  • Cook for 1 min.
  • Mix in the udon noodles.
  • Cook for 1-2 min until the noodles are coated in the sauce.
Serve

5 Serve

  • Serve the Spicy Gochujang Beef Udon Noodles with Pickled Cucumber Salad to the side.
  • Garnish with the remaining spring onion.
