Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry

1 Fry

  • Bring a large pot of salted water to a boil.
  • Heat a large pan over a medium-high heat with a drizzle of olive oil.
  • Fry the chopped onion and cherry tomatoes for 3-5 min until softened.
Tip! Slightly crush the cherry tomatoes to help them cook faster and release more flavour. If cooking for 4 people use a large pot or an extra large pan.
Make sauce

2 Make sauce

  • Add the tomato passata, vegetable seasoning, tomato paste, dried oregano, measured water and garlic onion powder.
  • Bring to a simmer and reduce the heat to medium.
  • Simmer, uncovered, for 5-7 min until reduced.
  • Adjust seasoning to taste.
Boil pasta

3 Boil pasta

  • Boil the tagliatelle for 2 min until tender.
  • Drain.
Prep

4 Prep

  • Meanwhile, pick the basil leaves.
  • Drain the mozzarella and tear into bite-sized pieces.
Finish pasta

5 Finish pasta

  • Once the sauce has reduced, add the cooked tagliatelle and baby spinach.
  • Toss to coat in the sauce.
  • Sprinkle over the grated Parmesan (reserve some for garnish) and add the mozzarella on top.
  • Cover the pan and simmer for 1 min further or until the cheese begins to melt.
Serve

6 Serve

  • Serve the Tomato, Spinach and Mozzarella Fresh Tagliatelle garnished with fresh Basil and remaining grated Parmesan.
