Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry
Bring a large pot of salted water to a boil.
Heat a large pan over a medium-high heat with a drizzle of olive oil.
Fry the choppedonion and cherrytomatoes for 3-5 min until softened.
Tip!Slightly crush the cherry tomatoes to help them cook faster and release more flavour. If cooking for 4 people use a large pot or an extra large pan.
2 Make sauce
Add the tomatopassata, vegetable seasoning, tomatopaste, dried oregano, measured water and garliconionpowder.
Bring to a simmer and reduce the heat to medium.
Simmer, uncovered, for 5-7 min until reduced.
Adjust seasoning to taste.
3 Boil pasta
Boil the tagliatelle for 2 min until tender.
Drain.
4 Prep
Meanwhile, pick the basil leaves.
Drain the mozzarella and tear into bite-sized pieces.
5 Finish pasta
Once the sauce has reduced, add the cooked tagliatelle and babyspinach.
Toss to coat in the sauce.
Sprinkle over the gratedParmesan (reserve some for garnish) and add the mozzarella on top.
Cover the pan and simmer for 1 min further or until the cheese begins to melt.
6 Serve
Serve the Tomato, Spinach and MozzarellaFresh Tagliatelle garnished with fresh Basil and remaining gratedParmesan.
