Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep goat cheese
Finely chop the pistachios and dried cranberries into small pieces.
Place the goatscheeselog on baking paper or cling film.
Sprinkle the pistachios and dried cranberries all over and around the sides, pressing down firmly so they stick.
Wrap and chill in the fridge.
2 Prep
Slice the dried apricots in quarters.
Thinly slice the mature cheddarcheese into 15-18 pieces.
Using scissors, snip the red grapes into 7-8 smaller bunches.
Snip the rosemary into smaller bunches (to use for garnish).
3 Assemble bowls
Line a wooden platter or board (approx 45cm x 27cm or larger) with baking paper.
Place 3 small bowls near the corners of the board, leaving enough space all the way around.
Bowl 1: fill with the onion marmalade.
Bowl 2: fill with the sticky fig relish.
Bowl 3: fill with the kalamata and green olives.
4 Assemble cheese
Cheese 1: Place the brie near the bottom left corner of the board.
Cheese 2: Place the goatscheeselog near the top center of the board.
Cheese 3: Surround the slices of mature cheddar around the bowl of olives.
Cheese 4: Place the blue cheese near the bottom right corner of the board.
5 Add crackers and fruit
Steps 1-3: Divide the crackers and place near the cheeses, surrounding the small bowls.
Steps 4-6: Add the bundles of grapes next to the cheeses.
6 Add dried fruit and nuts
Steps 1-3: Fill in the small spaces and gaps with a mix of almonds and apricots.
Finish the board by garnishing with rosemary all around.
