Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Mix dry ingredients

1 Mix dry ingredients

  • In a large bowl, sieve the flour, baking powder and a pinch of salt.
  • Add the sugar and use a whisk to combine the dry ingredients.
  • Set aside.
Tip! Sieving the flour is optional but makes mixing easier and adds air, resulting in lighter, fluffier pancakes.
Melt butter

2 Melt butter

  • Add the butter to a large microwavable bowl or jug.
  • Heat the butter in the microwave in 20 sec bursts until melted.
Mix wet ingredients

3 Mix wet ingredients

  • To the jug with the melted butter, add the milk, eggs and vanilla essence.
  • Whisk until well combined.
Make batter

4 Make batter

  • Add the wet ingredients to the dry ingredients.
  • Whisk to combine to form a thick batter.
Fry pancakes

5 Fry pancakes

  • Heat a large non-stick pan over medium heat with a drizzle of oil.
  • Use a 1/4 cup measuring cup or big spoon to add batter to the pan.
  • Cook for 1-2 min until bubbles start to form on the surface.
  • Add a few blueberries and flip the pancake.
  • Cook for another 1-2 min until golden brown and fluffy.
  • Reduce the heat if the pancakes are browning too quickly.
Tip! Don't like cooked blueberries? Save them for serving fresh.
Serve

6 Serve

  • Serve the Fluffy Blueberry Pancakes with a dollop of Creamy Greek Yogurt and drizzled with Maple Syrup.
  • Top with any extra blueberries.
