Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make cream cheese mix
Preheat oven to 220°C/200°C fan.
Reserve 2 tsp of icingsugar for serving.
In a small bowl, mix the creamcheese, vanillaessence and remaining icingsugar together until smooth.
2 Prepare puff
Unroll the puffpastry onto a baking tray.
Cut into 6 even rectangles.
Using a small knife, score a 1 cm border around the edges of each rectangle (do not cut all the way through).
In a small bowl, crack in and whisk the egg.
Brush the puffpastry along the outer edges with the egg wash.
3 Add cream mix
Spoon and evenly divide the cream cheese mix into the centre of each rectangle, keeping it inside the scored borders.
4 Add blueberries
Gently press the blueberries on top of the creamcheesemix.
Tip!Reserve any blueberries that don't fit for serving or a snack!
5 Bake
Bake, on the bottom rack, for 14-16 min or until puffed, golden and cooked through.
6 Serve
Cool slightly and dust with the reserved icingsugar.
