Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make cream cheese mix

1 Make cream cheese mix

  • Preheat oven to 220°C/200°C fan.
  • Reserve 2 tsp of icing sugar for serving.
  • In a small bowl, mix the cream cheese, vanilla essence and remaining icing sugar together until smooth.
Prepare puff

2 Prepare puff

  • Unroll the puff pastry onto a baking tray.
  • Cut into 6 even rectangles.
  • Using a small knife, score a 1 cm border around the edges of each rectangle (do not cut all the way through).
  • In a small bowl, crack in and whisk the egg.
  • Brush the puff pastry along the outer edges with the egg wash.
Add cream mix

3 Add cream mix

  • Spoon and evenly divide the cream cheese mix into the centre of each rectangle, keeping it inside the scored borders.
Add blueberries

4 Add blueberries

  • Gently press the blueberries on top of the cream cheese mix.
Tip! Reserve any blueberries that don't fit for serving or a snack!
Bake

5 Bake

  • Bake, on the bottom rack, for 14-16 min or until puffed, golden and cooked through.
Serve

6 Serve

  • Cool slightly and dust with the reserved icing sugar.
  • Serve the Fresh Blueberry & Cream Cheese Puff Pastry Tarts warm or at room temperature.
