Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Cook quinoa

1 Cook quinoa

  • Rinse the quinoa in warm water.
  • Drain in a fine sieve.
  • Bring the measured water to boil in a pot.
  • Add the quinoa and a pinch of salt.
  • Cover with a lid and reduce the heat to low.
  • Simmer for 12-15 min or until the liquid is absorbed and the quinoa is tender.
  • Transfer to a bowl, cover and refrigerate to chill.
Tip! Washing quinoa with warm water before draining it removes the bitter-tasting saponins from its surface.
Prep Tuna

2 Prep Tuna

  • Slice the Tuna into half across, and into medium cubes.
  • Add the sesame seeds on a plate and press one side of each Tuna cube into it.
Fry Tuna

3 Fry Tuna

  • Heat a large pan over medium high heat with a small drizzle of oil.
  • Fry the almond flakes until golden, and set aside.
  • Fry the tuna, (sesame seeds down) for 2 min until golden and crispy.
  • Flip over and cook for 1-2 min on the other side.
  • Transfer to a plate, cover and refrigerate to chill.
Prep vegetables

4 Prep vegetables

  • Meanwhile, slice the cucumbers in half moons.
  • Slice the cherry tomatoes in half.
  • Peel and grate the carrots
  • Trim and chop the spring onions.
  • Pick the coriander.
  • In a large bowl, toss the vegetables together.

  • Trim, wash, and dry the boston lettuce.
  • In a small bowl, whisk the soy sauce, rice vinegar, ginger paste, sesame dressing, and honey.
Serve

6 Serve

  • Arrange with the Boston lettuce at the bottom, followed by the Quinoa, Salad Vegetables, and chilled Tuna.
  • Serve the Fresh Tuna Quinoa Salad, drizzle over the Creamy Sesame Dressing and garnish with Almond Flakes.
