Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make mash

1 Make mash

  • Peel and chop the potatoes into bite-sized pieces.
  • Add them to a pan of boiling water with a generous pinch of salt.
  • Cook over medium heat for 20 min or until soft.
  • Once soft, drain the potatoes and return them to the pan with the cream cheese.
  • Mash until smooth.
  • Season with salt and pepper.
  • Cover and set aside.
Prep

  • Meanwhile, peel and finely chop the garlic.
  • Slice the lemon into wedges.
  • Portion the salmon.
Fry salmon

3 Fry salmon

  • Sprinkle the salmon skin with salt.
  • Heat a pan over a medium-high heat with a drizzle of oil.
  • Once hot, add the salmon skin-side down.
  • Cook for 3-4 min.
  • Flip and cook for 3-4 min further or until cooked through.
  • Transfer the salmon onto a plate.
  • Discard any excess oil and reserve the pan.
Make garlic butter

4 Make garlic butter

  • Return the pan to a medium heat with the butter.
  • Once melted, add the garlic.
  • Cook for 1 min further.
  • Remove from the heat and reserve until Step 6.
Cook peas

5 Cook peas

  • Meanwhile, bring a pot of salted water to a boil.
  • Add the peas and boil for 1 min.
  • Drain the peas and return them to the pot with a pinch of salt and pepper.
  • Cover to keep warm and set aside.
Serve

6 Serve

  • Return the salmon, skin-side up to the garlic butter with a squeeze of lemon and set aside.
  • Serve the Garlic Butter Salmon with Creamy Mashed Potato and Green Peas.
  • Garnish with any remaining lemon wedges and garlic butter alongside.
