Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Boil a kettle.
Trim and finely slice the springonion, separating the white parts from the green.
In a small bowl, combine the gingergarlicpaste, vegetarianoyster and soy sauce.
This is your stir-fry sauce.
Place the noodles in a large bowl, cover with boiling water to loosen, then drain.
2 Prep tofu
Chop the tofu into bite-sized cubes.
In a separate large bowl, toss the tofu in the corn starch.
3 Fry tofu
Heat a large pan over a medium-high heat with a generous drizzle of oil.
Once hot, add the tofu and fry for 3-5 min, turning regularly until golden and crispy.
Once cooked, transfer to a plate.
Wipe and reserve the pan.
4 Fry veg
Return the reserved pan to a medium-high heat with another drizzle of oil.
Once hot, add the white parts of the springonion.
Fry for 1 min.
Add the whole snowpeas and fry for 3 min.
5 Finish stir-fry
Add the drained udonnoodles, fried tofu, bean sprouts, stir-frysauce and sesameoil.
Mix well and cook for 1 final min.
6 Serve
Serve the GingerTofuUdonNoodles garnished with the remaining springonions, crispyonion, sushiginger and sesameseeds.
