Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Line an 18x18cm dish (or something similar) with baking paper or grease lightly with oil.
Roughly chop the dried apricots.
Heat a medium sized pot over medium heat.
Add the butter, date paste and agave syrup.
Mix for 5-7 min or until the date paste has melted and everything is fully combined.
Reduce the heat to low.
Tip!Add a splash of water if the date mixture becomes too thick.
2 Combine
Lightly blitz the oats in a food processor to form a coarse flour. Alternatively roughly chop with a knife.
To the datesyrup, add the apricots, vanilla, oats, almond flakes, sunflower seeds and pumpkin seeds with a light pinch of salt.
Mix well for 1 min and remove from the heat.
Tip!The mixture should be well combined yet still sticky.
3 Refrigerate
Add the granola mix to the dish and press down firmly to compress, ensuring that it is spread evenly.
Cover and refrigerate for a minimum of 2 hours or overnight.
4 Serve
Slice the Granola Date Bars into bars or squares and have it as an on-the-go snack.
Tip!Store the Granola Bars in an airtight container or ziplock bag at room temperature for up to one week.
