Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Cook rice
Preheat the oven to 200°C/180°C fan.
Rinse and drain the rice.
To a pot add the rice, a pinch of salt and the measured water and bring to a boil over a high heat.
Once boiling, reduce the heat to low, cover, and cook for 10-12 min or until the water is absorbed and the rice is cooked.
Remove the pot from the heat and keep covered until serving.
Tip!If using the air fryer, preheat to 180°C.
2 Make kofta
Pick and finely chop the parsley.
To a large bowl, add the chickenmince, panko, smokedpaprika, coriandercumin, cinnamon, oregano, half of the sumac and half of the parsley (saving the rest for the salad).
Add a pinch of salt and pepper and with clean hands knead until combined.
Shape into 8 equal koftas.
Set aside.
Tip!If cooking for kids, make some kofta plain, seasoned only with salt and pepper.
3 Prep salad
Deseed and chop the pepper into bite-sized pieces.
Chop half of the cucumbers into bite-sized pieces.
Chop the tomatoes into bite-sized pieces.
Chop the olives in half.
In a small bowl, combine the redvinegar, dijonmustard, olive oil and a pinch of salt and pepper to taste.
4 Cook kofta
Place the kofta on a lined baking tray.
Bake for 12-15 min until cooked through.
Remove from the tray and set aside to rest until serving.
Tip!If using an air fryer, add the koftas to the air fryer basket with a drizzle of spray of oil. Air fry for 10-12 min until cooked through, turning half way through.
5 Mix sides
Grate the remaining cucumber and cut the lemon into wedges.
Using clean hands, over a bowl squeeze out as much water from the grated cucumber as possible.
In a bowl, combine the yogurt and grated cucumber with a squeeze of lemonjuice and a sprinkle of salt and pepper to taste.
In a separate large bowl, combine the prepared salad ingredients with a drizzle of the dressing, the remaining parsley and sumac.
Tip!If cooking for kids, leave some of the pepper, tomato and cucumber separate for serving.
6 Serve
Crumble the feta over the salad.
Serve the Greek Chicken Kofta with Rice and Feta Salad with the Tzatziki on the side.
