Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make dressing
In a jar with a lid, combine the olive oil, redvinegar, dijonmustard, most of the driedoregano, a small pinch of salt, pepper, and sugar (to balance acidity).
Shake really well until the dressing is thick and creamy.
Tip!Alternatively, use a bowl and whisk to make the dressing.
2 Prep vegetables
Slice the tomatoes in wedges.
Chop the cucumbers into rounds.
Deseed and thinly slice the greenpepper.
Peel and thinly slice the redonion, and add it to a small bowl of cold water to help take the raw edge off.
Tip!Adjust the amount of onion to your liking, you may use only half.
3 Slice feta
Cut the feta into small cubes, or roughly crumble.
Sprinkle over the rest of the oregano.
4 Combine
Drain and pat dry the redonions.
Add the tomatoes, cucumbers, redonion, greenpepper, and olives to a large bowl with the feta.
Pour over the dressing, and gently toss to combine.
5 Serve
Serve the GreekFeta Salad as a starter or side alongside your favourite Mediterranean meal.
