Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Peel and finely slice the onion.
Cut the cherrytomatoes in half.
Peel and finely mince or grate the garlic.
Pick and finely chop theparsley and mint.
Tip!Use only half the onion if preferred as it can be overwhelming.
2 Mix the salad
In a bowl, combine the tomatoes, onion, kalamataolives, choppedherbs, garlic, a pinch of oregano, a drizzle of oliveoil and a pinch of salt and pepper.
Set aside.
3 Spread the hummus
Spread the hummus onto a large serving plate, using the back of a spoon.
Sprinkle with a pinch of sumac.
4 Warm pitta
Heat the pittabread in the microwave for 30-60 secs or in a warm oven or air fryer for 1-2 min, until warm.
Cut each pittabread into smaller pieces for serving.
5 Serve
Spoon the salad over the hummus.
Top with crumbled feta and a drizzle of oliveoil.
Serve the Greek-inspired LoadedHummus with pittabread for dipping.
