Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Peel and finely slice the onion.
  • Cut the cherry tomatoes in half.
  • Peel and finely mince or grate the garlic.
  • Pick and finely chop the parsley and mint.
Tip! Use only half the onion if preferred as it can be overwhelming.
Mix the salad

2 Mix the salad

  • In a bowl, combine the tomatoes, onion, kalamata olives, chopped herbs, garlic, a pinch of oregano, a drizzle of olive oil and a pinch of salt and pepper.
  • Set aside.
Spread the hummus

3 Spread the hummus

  • Spread the hummus onto a large serving plate, using the back of a spoon.
  • Sprinkle with a pinch of sumac.
Warm pitta

4 Warm pitta

  • Heat the pitta bread in the microwave for 30-60 secs or in a warm oven or air fryer for 1-2 min, until warm.
  • Cut each pitta bread into smaller pieces for serving.
Serve

5 Serve

  • Spoon the salad over the hummus.
  • Top with crumbled feta and a drizzle of olive oil.
  • Serve the Greek-inspired Loaded Hummus with pitta bread for dipping.
