Instructions

Prep vegetables

1 Prep vegetables

  • Slice the lemon into wedges.
  • Peel and finely slice the red onion.
Tip! Lemon is juicier when you store it at room temperature rather than in the fridge.
Pickle onion

2 Pickle onion

  • In a small bowl, combine the red onion, olive oil and red vinegar with a generous squeeze of lemon juice and a pinch of salt.
  • Mix and set aside to pickle.
Tip! You might wish to pickle the onion for 3-4 hours before dinnertime, or even the day before.
Make tzatziki

3 Make tzatziki

  • Peel and finely chop the garlic.
  • Pick and finely chop the mint.
  • Grate the cucumber, then carefully squeeze out any excess water.
  • In a small bowl, combine the garlic, mint and the grated cucumber with the yogurt.
  • Season with a pinch of salt and black pepper to taste.
  • Mix well. Set tzatziki aside.
Tip! Go easy on the raw garlic if you find the taste too punchy.
Fry chicken

4 Fry chicken

  • Meanwhile, heat a large pan over a medium-high heat with a drizzle of oil.
  • Once hot, add the pulled chicken, garlic onion powder, cumin powder, paprika powder, oregano and black pepper.
  • Fry for 2-3 min.
  • Turn off the heat.
  • Cover to keep warm until ready to serve.
Prep gyros

5 Prep gyros

  • Pick and chop the parsley.
  • Halve the cherry tomatoes.
  • Crumble the feta.
  • Microwave the Arabic flatbread for 30 sec until hot.
Tip! Alternatively, you may warm the bread in the oven.
Serve

6 Serve

  • Spread some tzatziki onto a warm Arabic flatbread.
  • Add some pulled chicken, pickled onions, cherry tomatoes, feta, chopped parsley and a squeeze of lemon juice.
  • Roll into a gyro.
  • Serve the Greek Pulled Chicken Gyros with Feta and Tzatziki.
Tip! Serve the components family style and let everyone build their own gyros.
