Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 220°C/200°C fan.
Drain and rinse the chickpeas.
Drain and use kitchen towel to pat dry the halloumi.
Slice into chunks.
Peel and finely chop the garlic.
Zest the lemon and cut into wedges.
Tip!If using an air fryer, preheat to 190°C.
2 Roast
Add the chickpeas to a lined baking tray.
Add a drizzle of oil, cuminpowder, garlic, lemonzest and a pinch of salt and pepper.
Roast for 10 min.
Meanwhile, coat the halloumi in raselhanout.
After 10 min, add the halloumi to the tray.
Roast for 10-15 min until the chickpeas are crispy and halloumi is bubbling with crisp edges.
Tip!If using an air fryer, air fry the seasoned chickpeas for 7-8 min. Add the halloumi and air fry for 5-6 min further until crisp.y.
3 Prep salad
Meanwhile, finely shred the cabbage.
Pick the corianderleaves, reserve some for garnishing.
Peel the carrot and cut into fine strips.
Toss the salad ingredients together in a bowl with sumac, a pinch of salt and a squeeze of lemonjuice.
4 Make sesame dressing
In a small bowl, combine the sesamedressing, mayonnaise and lemonjuice to taste.
Add 1-2 Tbsp water to create a runny consistency.
5 Serve
Warm the arabicflatbread in the hot oven or a microwave for 30 seconds.
Serve the Halloumi and Chickpea Flatbreads topped with a spoonful of the Salad and a drizzle of CreamySesameDressing.
