Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate halloumi
Preheat the oven to 200°C/180°C fan.
Soak the bamboo skewers in water.
Chop the halloumi into bite-sized cubes. Add them to a large bowl.
Wash the lemon and grate its zest with a fine blade, taking care to avoid its bitter white pith.
Add 0.5 tsp of the lemonzest, 1 Tbsp of lemon juice, the garliconionpowder, a drizzle of olive oil, honey, dried oregano, smokedpaprika, salt and pepper to the bowl.
Mix well. Set aside.
Tip!Marinade the halloumi up to 24 hours in advance.
2 Thread skewers
Peel and slice the onions into wedges.
Separate them into individual petals.
Deseed and chop the peppers into bite-sized pieces.
Thread the marinated halloumi, peppers and onion onto the skewers.
Place the halloumiskewers onto a baking tray with a drizzle of oil and a pinch of salt.
Roast for 10-12 min or until the halloumi is browned slightly.
Tip!If using an air fryer, preheat to 180°C. Add the skewers to the air fryer basket. Air fry for 5-6 min until the halloumi is browned, turning halfway through.
3 Make tzatziki
Meanwhile, peel and mince 0.5 garliccloves.
Grate the cucumber and squeeze out any excess liquid.
In a bowl, combine the garlic, cucumber and yogurt.
Season with a pinch of salt and pepper.
Set the tzatziki aside.
4 Prep
Shred the babygemlettuce.
Chop the tomatoes into bite-sized pieces.
Cut the olives in half.
Tip!Mix the veg together with some of the remaining lemon juice and enjoy as a salad, or fill the pittas however you like.
5 Serve
Heat the pittabread in the oven for 3 min or until soft and warmed through.
Serve the Halloumi Souvlaki with Tzatziki on each Pitta with the tomatoes.
Serve any remaining tzatziki to the side.
