Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat oven to 180°C/160°C fan.
Line a 20x20cm oven-proof dish with baking paper.
Tip!If using a larger baking dish, reduce cooking time by 3-5 min to maintain the fudgy texture.
2 Melt chocolate
Bring a small pot of water to the boil.
Reduce the heat to a gentle simmer and place a large heat-proof bowl over the top.
Add the butter and Belgian dark chocolate into the bowl and melt together, stirring continuously.
Remove from the heat once melted.
Tip!Ensure that the bottom of the bowl does not touch the water as this might burn the chocolate.
3 Finish batter
Mix the caster sugar and vanilla extract into the melted butter and chocolate.
Ensure the batter is cool to the touch.
Whisk in the eggs, one at a time, until the mixture is thick and glossy.
Add flour and cocoa powder.
Combine to form a thick batter.
Add the milk chocolate and stir through gently.
4 Bake
Bake for 20-25 min or until the top is shiny and crisp - this will result in a fudgy brownie.
Remove from the oven and allow to cool completely before removing from the oven-proof dish.
Tip!If you prefer the brownie more set, bake for 3-5 min more. This will result in more of a cake-like brownie.
5 Prep icing
In a medium-sized bowl, combine the icingsugar with 2-3 Tbsp water.
Mix well to create a thick icing that is able to hold its shape when piped.
Transfer to a piping bag or into one corner of a sandwich bag.
Cut a small piece off the tip of the bag when ready to use the icing.
Tip!Start with 2 Tbsp water and add another as needed to create a thick, pipe-able icing.
6 Serve
once baked, allow the brownie to cool in the tin.
Remove once cooled and cut into squares.
Using the prepared icing, pipe your best mummies, spiderwebs and other spooky designs.
