Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep and fry
Peel and mince onion and garlic. Heat oil in a large pan over medium-high heat and fry onion for 5 minutes. Add garlic and fry for 2 minutes.
2 Add and simmer
Add the anchovies and cook for 1 minute before adding chopped tomatoes, chili flakes, salt and pepper. Bring to a boil, reduce the heat to low and cover. Let simmer lightly for 15 minutes.
3 Boil pasta
Meanwhile, bring a large pot of lightly salted water to a boil and boil linguini pasta until "al dente", for about 8 minutes. Drain.
4 Add prawns and spinach
Add the prawns and washed and choppedspinach to the tomato sauce and. Cook for about 3 more minutes until the prawns are cooked through and the spinach is wilted. Combine the cooked linguine pasta and the sauce. Divide to plates and finish with freshly choppedparsley.
