Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Roast fries

1 Roast fries

  • Preheat the oven to 200°C/180°C fan.
  • Meanwhile, slice the sweet potatoes (skins on) into fries.
  • Add the fries to a large baking tray with a drizzle of vegetable oil, garlic powder and salt.
  • Toss the fries in the oil until they are fully coated.
  • Roast for 30 min or until golden and crisp.
Tip! If using an air fryer, preheat to 190°C. Add the sweet potato fries to the air fryer basket with oil, garlic powder and salt. Toss to mix. Air fry for 25-30 min until fulled cooked, tossing halfway through. Keep warm until serving.
Marinate chicken

2 Marinate chicken

  • Meanwhile, finely chop the parsley and coriander (stems included).
  • Peel and mince the garlic.
  • In a large bowl, mix together the parsley, coriander, dried thyme, garlic, a generous squeeze of lemon, the olive oil, salt and pepper.
  • Add the chicken thighs and turn until fully coated.
Tip! Marinate the chicken up to 24 hours in advance.
Roast chicken

3 Roast chicken

  • Add the chicken thighs skin side up to a lined baking tray.
  • Roast for 30-35 min or until the chicken is cooked through.
Tip! If using an air fryer, air fry the chicken thighs for 25-28 min until cooked, turning halfway through. To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready!
Serve

4 Serve

  • Once the fries are golden and crisp, top them with the grated Parmesan.
  • Serve the Herbed Chicken alongside the Parmesan Sweet Potato Fries.
  • Add a dollop of sour cream and lemon wedges to the side.
