Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast fries
Preheat the oven to 200°C/180°C fan.
Meanwhile, slice the sweetpotatoes (skins on) into fries.
Add the fries to a large baking tray with a drizzle of vegetableoil, garlicpowder and salt.
Toss the fries in the oil until they are fully coated.
Roast for 30 min or until golden and crisp.
Tip!If using an air fryer, preheat to 190°C. Add the sweet potato fries to the air fryer basket with oil, garlic powder and salt. Toss to mix. Air fry for 25-30 min until fulled cooked, tossing halfway through. Keep warm until serving.
2 Marinate chicken
Meanwhile, finely chop the parsley and coriander (stems included).
Peel and mince the garlic.
In a large bowl, mix together the parsley, coriander, driedthyme, garlic, a generous squeeze of lemon, the oliveoil, salt and pepper.
Add the chickenthighs and turn until fully coated.
Tip!Marinate the chicken up to 24 hours in advance.
3 Roast chicken
Add the chickenthighs skin side up to a lined baking tray.
Roast for 30-35 min or until the chicken is cooked through.
Tip!If using an air fryer, air fry the chicken thighs for 25-28 min until cooked, turning halfway through. To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready!
4 Serve
Once the fries are golden and crisp, top them with the grated Parmesan.
Serve the HerbedChicken alongside the ParmesanSweet Potato Fries.
