Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat the oven to 210°C/190°C fan.
  • Finely chop the spring onion.
Fry sausage meat

2 Fry sausage meat

  • Heat a large pan over medium high heat with a drizzle of oil.
  • Fry the sausage meat for 4-5 min until browned.
  • Add the spinach and a splash of water and cover with a lid to wilt the spinach.
Tip! If your frying pan is oven-safe, feel free to use it to bake the frittata.
Mix eggs

3 Mix eggs

  • Meanwhile, in a large bowl, whisk the eggs, spring onion, vegetable seasoning, garlic powder and a pinch of pepper.
  • Add the cottage cheese and grated cheddar.
  • Mix well.
Tip! For a smoother texture, use a hand blender or food processor to lightly blitz the cottage cheese with a splash of water before mixing through.
Combine

4 Combine

  • Add the fried sausage meat and wilted spinach to an oven proof dish.
  • Pour over the eggs and cheese mixture.
  • Mix with a spoon to distribute all the ingredients evenly.
Bake

5 Bake

  • Bake for 20-25 min until browned and well set.
  • Remove and cool in the pan for 5 min.
Tip! The frittata is done when the centre is no longer jiggly or wet; a knife inserted into the centre comes out clean.
Serve

6 Serve

  • Serve the High-Protein Sausage Meat and Cottage Cheese Frittata with Baby Spinach sliced into wedges.
