Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make dough
In a bowl, combine the all purpose flour, yeast and salt. Mix well. Gradually add the warm water while mixing the dough with a wooden spoon. Add the olive oil. Knead for 5 min. Shape the dough into a ball, place it in a bowl, cover it with cling film and leave it to prove at warm room temperature for 30-35 min or until doubled in size.
2 Prep toppings
Meanwhile, preheat the oven to 220°C/200°C fan. Slice the bell peppers into thin strips. Clean and slice the mushrooms. Peel and chop the onion.
3 Fry toppings
Heat a large pan over a medium heat with a drizzle of oil. Add the bell peppers, mushrooms and onion and cook for 6 min until starting to soften. Season with salt.
4 Prep Parmesan
Meanwhile, add the cashew nuts, nutritional yeast, garlic powder and salt to a food processor and blitz until the mix resembles coarse meal - this is your vegan cashew Parmesan.
5 Assemble pizzas
In a bowl, combine the sugar, oregano, tomatopaste, garlicpaste and a pinch of salt with a drizzle of oliveoil. Using a rolling pin, roll the dough out onto a lined baking tray. Spread the tomato paste mix over the dough. Top with the vegetable mix, olives and the cashewParmesan.
6 Serve
Bake the pizza in the oven for 15-20 min. Wash and dry the rocket. Serve it over and alongside the baked pizza.
