Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make mint yogurt

1 Make mint yogurt

  • Pick and chop the mint leaves.
  • Combine the yogurt and mint with a pinch of salt.
Make hot honey

2 Make hot honey

  • In a small saucepan over medium heat, combine honey and chilli garlic sauce.
  • Heat gently for 1-2 min, stirring regularly.
  • Once warmed and mixed well, remove from the heat and set aside until serving.
Fry chicken

3 Fry chicken

  • Slice the chicken into thin strips.
  • In a bowl, add the chicken strips, paprika, chicken seasoning, oregano and a pinch of salt and pepper.
  • Heat a non-stick pan over medium heat with a drizzle of oil.
  • Fry the chicken strips for 6-7 min until browned and cooked through.
Tip! If using an air fryer, preheat to 180°C. Air fry the chicken for 8-10 min until golden and cooked through, tossing halfway through.
Prep salad

4 Prep salad

  • Meanwhile, cut the cherry tomatoes in half.
  • Cut cucumber into thin strips or batons.
  • Combine the cherry tomatoes and cucumber in a bowl.
  • Season with a pinch of salt and pepper.
Prep pitta bread

5 Prep pitta bread

  • Warm the pitta bread in a warm oven for 1-2 min or in the microwave for 30 sec.
  • Cut each pitta in half to create a pitta pocket.
Serve

6 Serve

  • Stuff each Pitta Pocket with a dollop of Mint Yogurt, Chicken Strips, Cucumber, Tomatoes, Rocket and a drizzle of Hot Honey.
  • Alternatively, serve the Chicken, Cucumber, Tomatoes, Rocket and Mint Yogurt on top of each Pitta with a drizzle of Hot Honey and fold over.
