Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make mint yogurt
Pick and chop the mintleaves.
Combine the yogurt and mint.
2 Make hot honey
In a small saucepan over medium heat, combine honey and chilligarlicsauce.
Heat gently for 1-2 min, stirring regularly.
Once warmed and mixed well, remove from the heat and set aside until serving.
3 Fry halloumi
Cut the halloumi into thick slices.
Toss with oregano.
Heat a pan over medium heat with a drizzle of oil.
Fry the halloumi for 2-3 min on each side until golden brown and crisp.
Tip!If using an air fryer, preheat to 180°C. Air fry the halloumi for 5-6 min until golden and crispy, tossing halfway through.
4 Prep salad
Cut cherrytomatoes in half.
Cut cucumber into thin strips or batons.
Combine the cherrytomatoes and cucumber in a bowl.
Season with a pinch of salt and pepper.
5 Cut bread
Warm the pittabread in a warm oven for 1-2 min or in the microwave for 30 sec.
Cut each pitta in half to create a pittapocket.
6 Serve
Stuff each PittaPocket with a dollop of MintYogurt, HalloumiStrips, Cucumber, Tomatoes, Rocket and a drizzle of HotHoney.
Alternatively, serve the Halloumi, Cucumber, Tomatoes, Rocket and MintYogurt on top of each Pitta with a drizzle of HotHoney and fold over.
