Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 200°C/180°C fan
Deseed and chop the pepper into bite-sized pieces.
Peel and chop the onion into wedges.
Trim the cauliflower florets, discarding the woody ends.
Chop the eggplants into bite-sized pieces.
2 Roast veg
Add all the veg to a lined baking tray.
Drizzle with oil and sprinkle over the vegetableseasoning.
Roast for 15 min.
Meanwhile, pick the corianderleaves and using a pestle and mortar grind the coriander and cuminseeds.
After 15 min add the fresh coriander and crushed coriandercuminseeds.
Roast for a further 10-12 mins.
3 Make patties
Meanwhile, in a bowl, combine the lambmince, gingergarlicpaste, coriandercuminpowder and garammasala with a pinch of salt and pepper
Using clean hands form the mixture into 6 equal patties.
4 Fry patties
Heat a large frying pan over a medium-high heat with a drizzle of oil.
Fry the patties for 2-3 min each side until cooked through.
Remove from the pan and set aside.
Reserve the pan unwiped.
5 Make sauce
Meanwhile, peel and finely chop the garlic.
Return the the pan to the heat with a small drizzle of oil.
Fry the garlic for 1 min.
Add the curry(spicy!) and turmeric powder, frying for 30 sec until fragrant.
Add the tomatopaste, tomatopassata, measured water and 0.5 chickenstockcube.
Mix well and bring to a simmer.
Cook the sauce for 3-5 min until slightly thickened.
Adjust seasoning to taste.
6 Serve
Serve the IndianLambKofta Patties with Roasted Veg and CurriedTomatoSauce.
