Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil rice

1 Boil rice

  • Rinse and drain the rice.
  • Add the rice, a pinch of salt and the measured water to a pot with a lid. Bring to a boil over a high heat.
  • Lower heat, cover and cook for 12-14 min, until the rice is tender and the water is absorbed.
  • Remove from the heat and keep covered until serving.
Prep

  • Peel and finely slice the brown onion.
  • Crush the cardamom pods with the back of a knife.
  • Trim and chop the green beans.
  • Slice the lemongrass in half and bash it with the back of a knife.
  • Cut the lime into wedges.
Cook onions and lamb

3 Cook onions and lamb

  • Heat a large pot over medium heat with a drizzle of oil.
  • Fry the onions until softened for 3-4 min.
  • Turn the heat to high and add the lamb.
  • Fry the lamb for 4-5 min until browned all over.
Add spices

4 Add spices

  • Add the ginger garlic paste and cardamom.
  • Cook for 1 min until fragrant.
  • Add the turmeric, coriander cumin and black pepper.
  • Cook for 1 min further.
Finish curry

5 Finish curry

  • Add green beans, 200 ml coconut cream, 0.5 vegetable stock cube, sugar, tamarind, lemongrass and measured water.
  • Bring to a boil.
  • Lower the heat and cook for 5-6 mins until thickened.
Serve

6 Serve

  • Serve the Indonesian-Style Lamb Mince & Green Bean Curry.
  • Sprinkle crispy onions all over and squeeze over lime juice to taste.
