Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil rice
Rinse and drain the rice.
Add the rice, a pinch of salt and the measuredwater to a pot with a lid. Bring to a boil over a high heat.
Lower heat, cover and cook for 12-14 min, until the rice is tender and the water is absorbed.
Remove from the heat and keep covered until serving.
2 Prep
Peel and finely slice the brownonion.
Crush the cardamompods with the back of a knife.
Trim and chop the greenbeans.
Slice the lemongrass in half and bash it with the back of a knife.
Cut the lime into wedges.
3 Cook onions and lamb
Heat a large pot over medium heat with a drizzle of oil.
Fry the onions until softened for 3-4 min.
Turn the heat to high and add the lamb.
Fry the lamb for 4-5 min until browned all over.
4 Add spices
Add the gingergarlicpaste and cardamom.
Cook for 1 min until fragrant.
Add the turmeric, coriandercumin and black pepper.
Cook for 1 min further.
5 Finish curry
Add greenbeans, 200 ml coconutcream, 0.5 vegetablestockcube, sugar, tamarind, lemongrass and measuredwater.
Bring to a boil.
Lower the heat and cook for 5-6 mins until thickened.
6 Serve
Serve the Indonesian-Style LambMince & Green Bean Curry.
Sprinkle crispyonions all over and squeeze over limejuice to taste.
