Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 200°C/180°C fan.
Peel and chop the the onion into wedges.
Chop the zucchini into half moons.
Peel and chop the carrot into bite-sized pieces.
Deseed and chop the pepper into bite-sized pieces.
2 Roast veg
Transfer the veg to a lined baking tray.
Drizzle with oil and sprinkle over the thyme, vegetableseasoning and a pinch of pepper.
Roast the veg for 20-25 min until tender.
3 Make patties
Meanwhile, crush the fennelseeds in a pestle and mortar.
In a bowl combine the lambmince with the fennelseeds, garliconionpowder, oregano and pinch of salt and pepper.
Using clean hands form the mixture into 6 equal patties.
4 Fry patties
Heat a large frying pan over a medium-high heat with a drizzle of oil.
Fry the patties for 3 min each side, or until cooked to your liking.
Remove the patties and reserve the pan.
5 Make sauce
Meanwhile, peel and finely chop the garlic.
Return the pan to the heat with another drizzle of oil.
Fry the garlic for 1 min.
Add the tomatopaste, passata and 0.5 stockcube.
Mix well and cook for 1-2 min.
Add the measuredwater and simmer for 3-4 min until slightly thickened.
Tear in the basilleaves and adjust seasoning to taste.
6 Serve
Serve the ItalianLambPatties with ThymeRoasted Veg and Marinara Sauce.
