Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat the oven to 200°C/180°C fan.
  • Peel and chop the the onion into wedges.
  • Chop the zucchini into half moons.
  • Peel and chop the carrot into bite-sized pieces.
  • Deseed and chop the pepper into bite-sized pieces.
Roast veg

2 Roast veg

  • Transfer the veg to a lined baking tray.
  • Drizzle with oil and sprinkle over the thyme, vegetable seasoning and a pinch of pepper.
  • Roast the veg for 20-25 min until tender.
Make patties

3 Make patties

  • Meanwhile, crush the fennel seeds in a pestle and mortar.
  • In a bowl combine the lamb mince with the fennel seeds, garlic onion powder, oregano and pinch of salt and pepper.
  • Using clean hands form the mixture into 6 equal patties.
Fry patties

4 Fry patties

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the patties for 3 min each side, or until cooked to your liking.
  • Remove the patties and reserve the pan.
Make sauce

5 Make sauce

  • Meanwhile, peel and finely chop the garlic.
  • Return the pan to the heat with another drizzle of oil.
  • Fry the garlic for 1 min.
  • Add the tomato paste, passata and 0.5 stock cube.
  • Mix well and cook for 1-2 min.
  • Add the measured water and simmer for 3-4 min until slightly thickened.
  • Tear in the basil leaves and adjust seasoning to taste.
Serve

6 Serve

  • Serve the Italian Lamb Patties with Thyme Roasted Veg and Marinara Sauce.
