Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate chicken
If using an oven, preheat to 220°C/200°C fan.
If using an air fryer, preheat to 180°C.
Zest and cut the lime into wedges.
In a large bowl, mix the chickenseasoning, allspice, garlicpowder, brownsugar, soysauce, thyme, a pinch of chilliflakes(spicy!), a pinch of salt and pepper, half of the limejuice and a drizzle of oliveoil.
Add the chickendrumsticks and toss well to coat.
Tip!Have spare time? Marinate the chicken 12-24 hours before cooking.
2 If using an oven
Place the drumsticks onto a lined baking tray.
Roast for 18-20 min or until the drumsticks are golden-brown and crispy.
Tip!Having a barbecue? Place the chicken drumsticks over an indirect heat and grill for 10-15 min, turning occasionally.
3 If using an air fryer
Place the drumsticks in a lined air fryer basket.
Air fry for 12-15 min or until the drumsticks are golden-brown and crispy, turning halfway through.
Tip!Be careful not to overcrowd your air fryer basket - air fry them in batches instead.
4 Make dip
In a small bowl, combine the pineapplepassionpreserve, sourcream and a splash of vinegar.
Add a squeeze of limejuice and zest.
Season with salt and pepper to taste.
Keep in the fridge until serving.
Tip!If the sauce is too thick, add small amounts of water until the desired consistency.
5 Serve
Roughly chop the coriander.
Serve the Jamaican Jerk Chicken Drumsticks with Creamy Pineapple Dip.
Garnish with chopped coriander.
