Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Bread prawns

1 Bread prawns

  • Wash the prawns and drain on kitchen paper.
  • In a shallow bowl, whisk together the egg, soy sauce, flour and pinch of salt and pepper. Mix until smooth. This is the egg batter.
  • Add the panko bread crumbs to a separate shallow bowl or plate.
  • Add all the prawns to the egg batter and coat well.
  • One by one, coat the prawns in the bread crumbs, pressing down lightly to ensure the coating sticks.
  • Place the breaded prawns on a large plate or tray.
Fry prawns

2 Fry prawns

  • Heat a pan over medium heat with a generous drizzle of oil.
  • Fry the breaded prawns for 2-3 min on each side until golden and crispy. Cook in batches to avoid overcrowding the pan.
  • Cook for 2 min on either side or until golden and crispy.
Tip! If using an air fryer, preheat to 180°C. Add the breaded prawns to the air fryer basket. Drizzle with oil and air fry for 6-7 min until golden brown. Cook in batches if necessary.
Prep

  • In a small bowl, mix together the sriracha (spicy!), sweet chilli sauce (spicy!), mayonnaise, a pinch of chilli flakes (spicy!) and a pinch of salt. This is the Dynamite sauce.
  • Separate the lettuce leaves and finely shred.
Serve

4 Serve

  • Scatter the shredded lettuce onto a large plate or serving dish.
  • Serve the Crispy Dynamite Prawns drizzled with creamy Dynamite Sauce.
