Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat oven to 180°C fan.
  • Finely slice cucumbers into bite-sized pieces.
  • Cut cherry tomatoes in half.
  • Pick the mint leaves.
Heat pitta

2 Heat pitta

  • Warm the pitta bread in a warm oven for 4-5 min.
  • Set aside.
Mix zaatar

3 Mix zaatar

  • In a small bowl, combine zaatar and olive oil.
  • Mix to a runny paste.
Serve

4 Serve

  • Spread labneh over the surface of each pitta bread.
  • Evenly divide the zaatar oil between the two pitta breads. Spread over the labneh.
  • Top with the cucumbers, tomatoes, olive slices and mint.
  • Sprinkle over sumac.
  • Serve the Labneh and Zaatar Manakeesh cut in half.
