Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Fry lamb

1 Fry lamb

Heat a large non-stick pan over a medium-high heat with a drizzle of oil. Once hot, add the lamb mince with a pinch of salt and fry for 5-7 min or until browned.
Simmer

2 Simmer

Once browned, add the ginger garlic paste, garam masala, curry powder, chilli powder (spicy!), smoked paprika, coriander cumin powder and tomato paste. Fry for 1 min further. Add the measured water and 0.5 stock cube. Bring to a simmer and cook, covered, over a medium-low heat for 10 min.
Tip! Sensitive to spice? Go easy on the chilli powder.
Blitz cauli

3 Blitz cauli

Meanwhile, using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains.
Make pilau

4 Make pilau

Heat a second large non-stick pan over a medium heat with a drizzle of oil. Once hot, add the cardamom, bay leaves and turmeric. Fry for 1 min. Add the cauliflower with a pinch of salt and a splash of water. Fry for 5 min or until the cauliflower begins to soften.
Finish curry

5 Finish curry

Meanwhile, finely chop the coriander leaves. After the curry has simmered for 10 min, stir half of the coriander though the lamb curry (reserve the rest for garnish) and remove the pan from the heat. Check the seasoning.
Serve

6 Serve

Serve the lamb curry with the cauliflower pilau and yogurt alongside and garnish with the remaining coriander.
