Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Fry lamb
Heat a large non-stick pan over a medium-high heat with a drizzle of oil. Once hot, add the lambmince with a pinch of salt and fry for 5-7 min or until browned.
2 Simmer
Once browned, add the gingergarlicpaste, garammasala, currypowder, chillipowder(spicy!), smokedpaprika, coriandercuminpowder and tomatopaste. Fry for 1 min further. Add the measured water and 0.5 stockcube. Bring to a simmer and cook, covered, over a medium-low heat for 10 min.
Tip!Sensitive to spice? Go easy on the chilli powder.
3 Blitz cauli
Meanwhile, using a box grater or food processor, grate or blitz the cauliflower until it resembles rice grains.
4 Make pilau
Heat a second large non-stick pan over a medium heat with a drizzle of oil. Once hot, add the cardamom, bayleaves and turmeric. Fry for 1 min. Add the cauliflower with a pinch of salt and a splash of water. Fry for 5 min or until the cauliflower begins to soften.
5 Finish curry
Meanwhile, finely chop the corianderleaves. After the curry has simmered for 10 min, stir half of the coriander though the lambcurry (reserve the rest for garnish) and remove the pan from the heat. Check the seasoning.
6 Serve
Serve the lambcurry with the cauliflowerpilau and yogurt alongside and garnish with the remaining coriander.
