Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make salad
Chop the cherrytomatoes in half.
Chop the cucumbers into half moons.
Peel and finely slice the onions.
Combine cherry tomatoes, cucumber, red onion, sumac, oliveoil, and a pinch of salt.
Set aside.
Tip!If cooking for kids, reserve a portion of plain cucumber and cherry tomatoes, and sumac as "sprinkles" to the side.
2 Prep
Preheat the oven to 200°C/180°C fan.
Finely chop the coriander (stems included).
Peel and finely mince the garlic.
Thinly slice the redchilli.
Cut the lemon in half.
3 Roast Potatoes
Chop the potatoes (skins on) into small bite-sized pieces.
Add them to a baking tray with a drizzle of oil, and a generous pinch of salt.
Roast for 15 min until crispy.
After 15 min, stir in the harissapaste(spicy!) and half the garlic (reserve half for tahini sauce).
Roast 12-15 min further or until lightly charred and tender.
Remove them from the oven, add a squeeze of lemon and sprinkle the coriander. Stir and set aside.
Tip!If cooking for kids, reserve a plain portion of roasted potatoes to the side.
4 Fry Koftas
Meanwhile, pick and finely chop the parsley.
In a bowl, combine the lamb, coriandercuminpowder, paprika, cinnamon, arabicmixmasala, garliconionpowder, olive oil, salt, pepper, and half the parsley.
With clean hands, knead until fully combined.
Shape into 10 pieces and set aside.
Heat a pan over a medium-high heat with a drizzle of oil.
Fry the koftas for 5-7 min, turning occasionally, until cooked through.
Add one half of the lemon to the pan. Fry for 1-2 min until charred.
5 Make Tarator Sauce
In a small bowl, combine the tahini, a squeeze of lemon, 2 Tbsp of water, a pinch of salt, and the remaining half of the parsley and garlic.
Stir to combine and set aside.
Tip!If the tahini is too thick, you can thin it out with a bit more water or lemon juice to taste.
6 Serve
Squeeze the remaining lemon over the salad and toss to combine.
Serve the Lamb Kofta and Spicy CorianderPotatoes with Tarator Sauce and Cucumber Tomato Salad.
Drizzle the tarator sauce over.
Garnish the potatoes with sliced chilli(spicy!) and a good squeeze of charred lemon.
Tip!If cooking for kids, slice the koftas into bite sized pieces. Serve the koftas, plain potatoes, cucumber and cherry tomatoes separately. Serve the Tarator sauce and sumac to the side.
