Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil sweet potatoes
Peel sweet potatoes and cut to chunks. Cover with water in a pot. Bring to boil. Cook for 15 minutes or until soft. Drain.
2 Prep veggies
Peel and slice onion thinly. Rinse green beans and discard stems. Cut into sticks.
3 Fry veggies
Heat oil in pan over medium-high heat. Fry onion for about 8 minutes until soft and slightly caramelized. Add green beans and continue cooking for 5 minutes. Season with salt. Remove from the pan and keep warm.
4 Make mash
Rinse and chop parsley. Mash sweet potatoes. Add butter, salt and black pepper. Fold in the parsley. Keep warm.
5 Fry sausages
Heat a bit of oil in a pan over medium heat. Fry sausages for about 7 minutes, turning, until cooked through. Serve with the sweet potato mash, fried onion and green beans.
