Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Dressing

1 Dressing

  • Zest the orange and cut in half.
  • Peel the garlic and use a grater or microplane to finely mince.
  • Finely chop the chives.
  • In a small bowl or measuring jug, combine the olive oil, vinegar, Dijon mustard, minced garlic, honey and a pinch of chives (reserving the rest for serving).
  • Whisk together.
  • Add the orange zest and the juice of an orange.
  • Adjust seasoning to taste.
Prep salad

2 Prep salad

  • Wash and dry the salad leaves.
  • Cut the cucumber into small bite-sized pieces.
Serve

3 Serve

  • Add the salad leaves and rocket onto a large serving plate or platter.
  • Add the cucumber slices on top.
  • Add the pumpkin seeds and a pinch of chives.
  • Drizzle the Leafy Greens Salad with the Zesty Orange Mustard dressing.
