Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate halloumi
Drain, pat dry and chop the halloumi into slices.
In a bowl, combine the paprika, thyme, garliconionpowder and sumac with a drizzle of oil.
Add the halloumi to the bowl and coat in the marinade.
Set aside.
Tip!If using an air fryer, preheat to 180°C.
2 Prep
Peel and finely slice the onions.
Chop the cherrytomatoes in half.
Chop the olives in half.
Deseed and chop the pepper into small bite-sized pieces.
3 Make tzatziki
Grate the cucumber.
Over a bowl, using clean hands squeeze the grated cucumber to remove as much liquid as possible.
In a bowl, combine the yogurt and cucumber with a pinch of salt and pepper.
4 Fry halloumi
Heat a large frying pan over a medium heat with a drizzle of oil.
Add the halloumi.
Fry for 2-3 min on each side until golden.
Tip!If using an air fryer, add the halloumi to the basket with a drizzle or spray of oil. Air fry for 4-5 min until golden brown and crispy, turning half way through.
5 Make dressing
Meanwhile, peel and finely chop the garlic.
Cut the lemon into wedges.
In a small bowl, combine 2 Tbsp of lemon juice, the garlic, oregano and agavesyrup with a drizzle of oliveoil and a pinch of salt and pepper.
6 Serve
Add the lettuce and veggies to a bowl.
Top with the halloumi.
