Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Marinate halloumi

1 Marinate halloumi

  • Drain, pat dry and chop the halloumi into slices.
  • In a bowl, combine the paprika, thyme, garlic onion powder and sumac with a drizzle of oil.
  • Add the halloumi to the bowl and coat in the marinade.
  • Set aside.
Tip! If using an air fryer, preheat to 180°C.
Prep

2 Prep

  • Peel and finely slice the onions.
  • Chop the cherry tomatoes in half.
  • Chop the olives in half.
  • Deseed and chop the pepper into small bite-sized pieces.
Make tzatziki

3 Make tzatziki

  • Grate the cucumber.
  • Over a bowl, using clean hands squeeze the grated cucumber to remove as much liquid as possible.
  • In a bowl, combine the yogurt and cucumber with a pinch of salt and pepper.
Fry halloumi

4 Fry halloumi

  • Heat a large frying pan over a medium heat with a drizzle of oil.
  • Add the halloumi.
  • Fry for 2-3 min on each side until golden.
Tip! If using an air fryer, add the halloumi to the basket with a drizzle or spray of oil. Air fry for 4-5 min until golden brown and crispy, turning half way through.
Make dressing

5 Make dressing

  • Meanwhile, peel and finely chop the garlic.
  • Cut the lemon into wedges.
  • In a small bowl, combine 2 Tbsp of lemon juice, the garlic, oregano and agave syrup with a drizzle of olive oil and a pinch of salt and pepper.
Serve

6 Serve

  • Add the lettuce and veggies to a bowl.
  • Top with the halloumi.
  • Serve the Lemon and Herb Greek Chicken Salad Bowls with a drizzle of the lemon herb dressing.
