Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Marinate prawns

1 Marinate prawns

  • In a bowl, combine the paprika, thyme, garlic onion powder and lemon pepper seasoning with a drizzle of oil.
  • Rinse and pat dry the prawns.
  • Add them to the bowl and coat in the marinade.
  • Set aside.
Prep

2 Prep

  • Peel and finely slice the onions.
  • Chop the cherry tomatoes in half.
  • Chop the olives in half.
Make tzatziki

3 Make tzatziki

  • Grate the cucumber.
  • Over a bowl, using clean hands squeeze the grated cucumber to remove as much liquid as possible.
  • In a bowl, combine the yogurt and cucumber with a pinch of salt and pepper.
Fry prawns

4 Fry prawns

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Add the prawns.
  • Fry for 3-5 min until cooked through.
Make dressing

5 Make dressing

  • Meanwhile, peel and finely chop the garlic.
  • Cut the lemon into wedges.
  • In a small bowl, combine 2 Tbsp of lemon juice, the garlic, oregano and agave syrup with a drizzle of olive oil and pinch of salt and pepper.
Serve

6 Serve

  • Add the lettuce and veggies to a bowl.
  • Top with the prawns and crumble over the feta.
  • Serve the Lemon and Herb Greek Prawn Salad Bowls with a drizzle of the lemon herb dressing.
